I spent yesterday afternoon with my niece rolling out, baking, and decorating Christmas cookies.
After decorating, she bailed on me. Typical attention span of a 12-year old. Within minutes of finishing the decorating process, my twin brothers got home, bringing their appetites with them, and decimated the cookie supply. Cookies for lunch? Yes, please!
I continued with some festive candy making, using Averie’s Creme de Menthe brownie recipe as inspiration. You all need to make these ASAP! So good. I am a York peppermint patty kind of girl, so this is my kind of candy. I can sit in front of a plate of sugar cookies and not be tempted in the slightest, but put these guys in front of me, and whatever shred of willpower I have evaporates.
The inside layer is the middle layer of Averie’s (who is having a giveaway right now – check it out!) brownies. I added a bit of light corn syrup to make it a bit more solid. After chilling for an hour or so, I melted a bit of milk chocolate (for the lactose tolerant among us) and some unsweetened bakers chocolate (for those intolerant to dairy…aka mine, all mine). Grab a glob of the peppermint, coat them in chocolate and set them out in the freezing air to solidify. Try to not devour them immediately, and then lament the fact that you didn’t make more.
Turns out everyone else likes the dark chocolate patties best. I may have to hide some if I want to have any for myself!
