Hold on to your hats kids, this is gonna be a long one. But, I promise it is chock full of good laughs and good eats. Let’s get this party started right. With the sweets. Because, why not?
This has nothing to do with anything. It just makes me laugh.
Remember how I told you that I made Kelly’s awesome peanut butter cookies, from her awesome cookbook? No? Well, trust me, I did. Since I can’t have eggs or butter, I replaced the egg with a “flax egg” (1 T flaxseed and 2 T water) and the butter with….more peanut butter. It’s all fat, right? ;)
- 3 medium sweet potatoes, cooked
- 3 T nutritional yeast
- 2 tsp dried mustard
- 2 cloves garlic
- 2-3 T non-dairy milk of your choice (I used unsweetened Almond Milk)
- 3 T hummus (I used wasabi hummus, because that’s what I had, but you can use any kind)
- LOTS of hot sauce
Put all ingredients into your blender and blend until creamy. If you have a Vita Mix, you can make this with just slightly cooked sweet potatoes, which is what I did. (You could maybe even use raw potatoes, but I have yet to go there…anyone know?) They come out SOOO fluffy and creamy!
I have had a really hard time concentrating these last few days. I find that I can work really well for a couple hours at a time, and then I hit a wall. Yesterday, instead of fighting through (and being unproductive for an hour), I saved my work and did a 20 minute yogadownload workout. I did Heart Opening Flow #1, which was perfectly paced (i.e. slow) with a lot of great stretching. It was exactly what I needed, and I sat back down and churned out some great mediocre powerpoint slides. At least enough to (I hope) not look like an ass in front of my advisor.
