Normally, I like to build up excitement before revealing what I consider the “meat” of my posts. (I am a total attention whore, yes, I know.) Today, however, I am SO very excited about what I made that I am going to start strong, and hope that you follow along to the end.
After reading Heather‘s post yesterday about popsicles, I was all jazzed up when I got home from school to make some avocado popsicles. Until that is, I remembered I don’t have any avocados right now (it is serious grocery shopping time, like today). I had cold frozen dessert on the brain though, so I had to do something. I had planned on making pomegranate lemon sorbet with some the POM Wonderful juice I got a while ago to sample this past weekend, but I never got around to it.
Buuuuttt…no lemons. Grrr. My eyes landed on an opened jar of coconut milk and a lime. You put the lime in the coconut… Right, anyway. I put the lime AND the coconut and the pomegranate juice in the VitaMix (with some vanilla, hence the brown).
It was almost too pretty to mix…almost.
Thankfully, I have a ginormous freezer, which is home to my neighbors ice cream maker (it has lived there for about a year now. Mine? Hmmm, well, of course not. I’ll just take it for a little spin…. Oh, Will Smith, I will forever love you and think of you as the Fresh Prince.)
You spin me right round baby right round, like a record, baby… (Man, I’m on a roll!)
[Do some dishes, start dinner, check email for 900th time] Half an hour later…
Big old spoonful, straight from the ice cream maker. Need I even say that this was DELICIOUS. I am trying to not eat it all in one day so as to savor it. I am all about the instant gratification though, so we’ll see how that goes.
Pomegranate-Lime Coconut Milk Ice Cream (Makes about 3 cups)
- 1/2 cup pomegranate juice
- 1 cup of coconut milk
- 1 cup of water
- 1 tsp vanilla
- 1 small lime (without the rind)
- pinch salt
- stevia or sweetener to taste.
Throw everything into the best kitchen appliance that costs a small fortune but is worth every penny the Vitamix and process until smooth. Pour into ice cream maker and do what the machine tells you to do. You could also make these into popsicles if you are so inclined. I might do this next.
Oh, and next time, I’d use 2 cups coconut milk and no water. I only had a cup left though. There are little pieces of lime throughout…so. good.
I’m not sure that this qualifies as any of the Green Weeks Challenges, but I don’t care. I’d give myself a point for it, because it is that good. I did ride my bike to school today though. I didn’t take a picture though, because public service announcement: self photography on a bike is dangerous. Yes, I know I could have taken one when I wasn’t moving. I forgot, okay. I’ll get one later today. Sheesh.
