Last summer was my first garden experience. Did I start small? Of course not. That’s not my style. I’m a Gemini. We Geminis go all out, and get bored fast (we’re also thought to have bi-polar personalities, but that is neither here nor there). Growing up, I wanted to be a part of everything, and I hated when a friend was involved in a sport that I wasn’t. Unfortunately, this means that I am “decent” at many things, but excel at very few. Let’s look on the bright side and call it “well-rounded”, kay?
I ended up having to dig space around my house in the middle of the summer to accommodate my expanding vegetable garden, where these tulips were growing (and also mint, which I fortuitously discovered on a hot I-need-a-mojito afternoon). I threw all the weeds and grasses into a wheelbarrow and dumped them under some trees in a sad little corner of my yard. Now: tulips! Hardy little devils, they are.
I also got a packet of Poppy seeds at the Earth Fair on Saturday, and originally I had contemplated scattering them about my yard, so I could fall asleep in a field of poppies a la Dorothy in the Wizard of Oz. Ultimately I went the boring route.
What’s the deal with all the flower talk, Katie? No, I’m not a flower gardener (true story: I had to google “red flower with bulb” to figure out what kind of flowers these are), but flowers attract bees and bees pollinate my garden vegetables. Ergo, I suddenly really want to grow flowers.
Speaking of bees, this little one (me) was a busy one yesterday. I finished draft #173,412 of the first chapter of my dissertation!! (I named the file “Chapter1FINAL.docx” hoping that my advisor takes the hint.) I took a break mid-morning to X it up (P90X style, yo), after my morning smoothie had cooled down my roasted stems (the ibuprofen I took might have helped too. I don’t normally like taking drugs – my motto is hugs not drugs – but kids, the swelling had given me CANKLES!!! That is just unacceptable.)
Cold weather will not keep me from my smoothie. Smoothie, I dub thee Chocolate Cherry Limeade (with the other usual suspects.)
It’s been a while since I gave you guys a recipe, hasn’t it? This weird day-glo orange concoction is a product of my sudden and growing addiction to cashew cream sauce.
Coconut Curry Cashew Sauce (Makes about 3 cups)
- 50 grams raw cashews (a little less than 1/2 cup), soaked for a couple hours if using a regular blender
- 1/2 cup diced tomatoes
- 1 T red curry paste (depending on how hot you want it and how hot your paste is)
- 1 t ginger
- 1 cup water (or coconut milk)
- 1 t coconut extract (if using water)
- 1 T potato starch mixed with 1 cup boiling water
Put first 6 ingredients into blender (or Vitamix, if you are so blessed) and puree until smooth. Add the boiling water and potato starch mixture and blend until thickened (about 1 minute). Pour sauce over everything in sight, including fingers. Try to look somewhat civilized. I didn’t bother with that last part, but I live alone so it doesn’t matter.
I’ve had this sauce with stir-fried veggies and quinoa for dinner the last two nights. I already know I will be eating it again tonight, because 1. I am predictable (read: broing) 2. I have a kabocha that will make a nice bowl for a curry stir fry and 3. I have a busy day ahead of me.
