Dating Game update: I’ve spent a lot of time getting to know most of the teachers that I could end up working with next year. I have to pick my top 3 (of 10) tomorrow. As of this minute, I think I know who my choices are, but ask me again in 3 minutes, and those names may change. I am starting to stress myself out over this decision.
You see, last year ended badly. Some of you may recall me mentioning that I got an infuriating email that induced me to do the P90X Kenpo workout not once but twice…in a row. (1 hour and 45 min of punches and kicks later and my blood pressure had nearly returned to normal.) Well, that email was from the teacher that I worked with last year. In an effort to let sleeping dogs lie (or whatever the appropriate cliche is), I am trying to put it behind me.
Needless to say (which is a stupid phrase, since I am obviously still going to say it, needless or otherwise), I don’t wish to repeat that experience, so I am not taking this choice lightly.
One more day to woo and be wooed, and then I will find out my fate. Will I teach high school biology with a nerdy, but well-meaning long-time teacher? Will I teach high school environmental science with a young, kinda cocky (but cute) guy who I had class with a couple years ago? Will I teach 6th grade science? To be continued….
In the meantime, I have a recipe I’ve been meaning to post for a few days now. Since my brain is nearing mushy stage right now, and I am having a hard time forming a thought, let alone a grammatically correct sentence, I’m just going to give it to you sans the usual
witty stupid chatter that you normally get from me.

Creamy Peanut Sauce (Adapted from The Best Cookbook Ever)
- 3 T peanut butter
- 2 T lime juice
- 2 T soy sauce (I used Coconut Aminos)
- 2 cloves minced garlic
- 1 tsp minced fresh ginger
- 1/4 tsp cumin
- 1/4 tsp dried cilantro (or 1 T fresh)
- 1/8 tsp chili garlic paste
- almond milk to thin
Blend everything together until creamy. Add milk to make the sauce as creamy or as thick as you like it.
This is by no means the first peanut sauce recipe on the internet. This is by no means the last peanut sauce recipe on the internet. What it is, however, is a simple, basic recipe that I LOVED. It made about 1 1/2 cups of sauce which I ate over rice noodles and roasted broccoli and brussels sprouts for a pretty tasty Saturday evening dinner (the same night Lori had an eerily similar dish).
I used the leftovers as a salad dressing this week. At some point recently I switched from being a “tiny bit of dressing” girl to a “you can never have too much dressing” kind of girl. So, needless to say (there it is again), its gone.
I’d make more, because it is that good and that easy, but there’s that whole mushy brain problem to contend with. I’d rather not operate heavy machinery (or lightweight kitchen appliances, as the case may be) while in this state. Plus, I’m late for my morning date with Shaun T.

I could probably bathe in peanut sauce and die happy. I’ve been known to order a side of peanut sauce at Thai restaurants even if it doesn’t go with my meal. But really, is there a meal that it doesn’t go with?
