Its V-Day. Big fat deal.
What is a big deal, however is that I am wearing my new skirt! Unfortunately, you’ll have to wait to see the finished product because you seeing it would require that I take a photo, and me = lazy. Its cute though. I’m looking cute on Valentine’s Day. Imagine that.
Surely that isn’t such a stretch, is it?
No really. It isn’t that I hate Valentine’s Day. I just don’t love it either. I am indifferent to the whole holiday. Although, I do like to get chocolate, so if I had a bf I’d be stoked about that part of it, but as it is? Meh.
But, I am going to take this day to do what I am required supposed to moved (without any prodding by the greeting card industry, oh no…) to do: thank you all for being wonderful, supportive, hysterical, awesome readers and friends.
I was going to get all sappy on you all. In fact, I even had a couple sentences typed out, but then I started thinking straight. I was all You know, Katie (yes, I talk to myself), they aren’t going to believe it is you writing if you get all sappy and gooey. They’ll think your blog has been hijacked by some goober.
So instead I’m going to point you here. In that post, you will read thoughts and feelings that I have and feel, but had no part in writing. In other words, its my version of a Hallmark card to everyone for Valentine’s Day.
About now, it being Valentine’s Day, how about that chocolate?
Ha! This is awesome for so so many reasons. First, its green. Second, it has beans in it. Third, it has chocolate in it. Fourth, it is seriously the best thing I have made in forever and I can’t keep myself from dipping a spoon into it every single time I open the fridge.
Chocolate Black Bean Dip
- 1 cup black beans
- 1/2 cup frozen spinach
- 1 T cocoa powder
- 1/2 tsp vanilla
- stevia, to taste, or any sweetener you want to use
- pinch of salt
- 1-2 T coconut oil, optional (but it adds a great smoothiness)
Blend everything until really creamy and eat up. (I really like it on carrot sticks.)
Note: If you are looking for some savory chocolate, that was yesterday. Try my chocolate chili! I’m eating some for lunch. I’m going to see if I can get chocolate in every meal I eat today. I don’t anticipate this being difficult for me.
The inspiration for this was Lori’s take on peanut butter chocolate chip hummus. Since I SO bastardized both the original and Lori’s version and since there is neither tahini nor garbanzos in here, I can’t in good conscience call this hummus.
So “dip” it is.
But this dip is a little to healthy for a holiday dedicated to love and chocolate, so I made cookies, too.
But I substituted coffee for the love in the “love and chocolate” equation alluded to above. Because in my world, coffee is love.
And because I am a dork, I shaped them into hearts.
And because I am emo…
…I broke my own heart. (Sorry…I couldn’t resist.)
